Blueberry Banana Pancake Muffins

Ingredients:

1 1/2 cups almond flour

1 cup oat flour

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

Pinch of salt

2 ripe mashed bananas

1/2 cup avocado oil

2 eggs

1/2 cup coconut yogurt

1/4 cup maple syrup

1 tsp vanilla

1 cup blueberries

Directions:

1. Preheat oven to 350° and line a cupcake tin with paper liners.

2. Whisk together the dry ingredients and set aside.

3. Then whisk together the wet ingredients until combined. Pour dry mixture into the wet mixture and fold in with a spatula to combine.

4. Fold in fresh blueberries and pour batter into muffin cups about 2/3 way full. Bake for 20-30 minutes or until golden on top and toothpick comes out clean. Let cool completely and enjoy!!
