Overnight Einkorn Flour Cinnamon Rolls with Maple Cream Cheese Frosting

Makes 12 Rolls

Ingredients:

1 cup warm milk

1/2 Tbsp active dry yeast

4 Tbsp coconut sugar, divided

3 1/2 cups einkorn flour, divided* (plus 2 to 4 Tbsp)

1 large egg, room temp

2 Tbsp unsalted butter melted, divided

1/2 tsp salt


For the Cinnamon Roll Filling:

8 Tbsp salted butter, softened, divided

1/4 cup coconut sugar

1 Tbsp ground cinnamon


To add before baking the rolls:

3/4 cup heavy cream

Butter mixture: 1/2 stick melted salted butter mixed with 2 tbsp coconut sugar and 2 tsp cinnamon


For the Cream Cheese Icing:

8 Tbsp (1 stick) salted butter, softened

8 oz cream cheese, softened

1/2 Tbsp vanilla extract

2/3 cup maple syrup


Process:

1. Make the dough: In a stand mixer, combine warm milk and yeast. Let sit 7 minutes. Whisk in 1/2 cup flour and 2 Tbsp coconut sugar. Cover and rise at room temp 35–45 min (or in a 100˚F oven 25 min) until puffy.


Whisk in egg, remaining 2 Tbsp coconut sugar, 1 Tbsp melted butter, and salt. Using dough hook, add remaining 3 cups flour gradually. Add extra flour 1 Tbsp at a time if sticky. Knead on speed 2 for 10 min. Cover and rise until doubled, about 2 hrs at room temp or 1 hr in a 100˚F oven.


2. Shape the rolls: On a floured surface, roll dough into a 17"x10" rectangle. Spread 8 Tbsp softened butter evenly. Mix coconut sugar and cinnamon, and sprinkle over dough. Roll tightly from the long side and pinch seam. Slice into 12 rolls.


Butter a 9x13 pan and place rolls cut-side down. Cover tightly with plastic wrap and refrigerate overnight (up to 18 hrs).


3. Bake: The next day, let rolls rise covered at room temp for 1–1.5 hrs (or 35 min in a 100˚F oven) until puffy


Mix melted butter, coconut sugar, and cinnamon. Pour heavy cream over rolls, then drizzle butter mixture on top. Bake at 350˚F for 22–24 min until tops are light golden. Slightly underbake for gooier rolls. Cool 15 min in the pan.


4. Make frosting: Beat softened butter and cream cheese until smooth. Add vanilla and slowly add in the maple syrup, beating until creamy.


5. Frost and serve: Spread frosting generously over warm rolls.
