Easy Gf Chocolate Chip Banana Muffins

Inspired by Ambitious Kitchen’s “Healthy Gluten Free Chocolate Chip Banana Muffins” recipe

 

Wet Ingredients:

1 heaping cup mashed, ripe banana (from about 3 medium bananas)

2 eggs

¼ cup pure maple syrup

2 teaspoons vanilla extract

Dry Ingredients:

1 cup packed fine blanched almond flour

1 1/3 cup gluten free quick oats

1.5 teaspoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

1/3 cup dark chocolate chips plus more for topping

Directions:

1. Preheat oven to 350° Fahrenheit and line a muffin tin.

2. Throw all ingredients into a blender excluding the chocolate chips. Blend until smooth.

3. Fold in chocolate chips with a spatula and spoon out batter into the muffin tins. Fill about 3/4 way full. Sprinkle extra chocolate chips on top.

4. Bake for about 20-25 min or until toothpick comes out clean. Enjoy!!
