I’m warning you guys... these are super addicting and you’ll find yourself eating them all in one day. They are the perfect snack, packed with fiber and protein!! Plus they taste like peanut butter oatmeal cookies and are very easy to make!!
Peanut Butter Oatmeal Cookie 'Energy Bites'
- 3/4 cup rolled or quick oats
- 2/3 cup peanut butter or nut butter
- 2 tbsp maple syrup
- 1 tbsp flaxseed meal
- 2 tsp vanilla
- dark chocolate chips
1. Mix all ingredients in a small bowl until combined and a dough forms. Since the consistency of all nut butter varies, you may need to add a splash of water or plant milk if the dough is too dry. If it is too wet, add a bit more oats or flax.
2. Roll into bite-sized balls and enjoy!! Store in the refrigerator.
