Lara's Grain-Free Cinnamon Baked Granola

Makes 1 sheet of baked granola

 

INGREDIENTS:

- 1 cup raw almonds (unsalted)

- 1 cup raw pecans (unsalted)

- 1/3 cup pumpkin seeds (unsalted)

- 1/3 cup sunflower seeds (unsalted)

- 1/4 cup unsweetened coconut flakes

- 1/4 cup raw honey

- 2 tsp vanilla extract

- pinch of sea salt

- 2 tsp cinnamon

DIRECTIONS:

1. preheat oven to 275 degrees Fahrenheit

2. In a food processor or blender add almonds and chop them into small pieces. Add almonds first then add pecans and coconut flakes. (do not over blend!)

3. Heat coconut oil, honey, cinnamon, and salt, over medium-high heat in a saucepan for 3-5 minutes

4. Remove from heat and stir in vanilla

5. Then add seeds, nuts, and coconut flakes and stir until coated

6. Spread granola mixture on a jelly roll pan sprayed with avocado oil

7. Bake for 20 minutes in the oven

8. Cool for another 20 minutes or until hardened
