Raspberry Dark Chocolate Baked Oats (no bananas needed)

This baked oats recipe is for all of my chocolate lovers out there. Unfortunately, I ran out of bananas at my house so this one is a banana-free version, but I found that it actually turned out better with the raspberry/chocolate flavor. It almost tasted like warm homemade chocolate cake! Full recipe below:)

 

Raspberry Dark Chocolate Baked Oats (vegan, gf, & banana-free)

makes 1 serving

 

Ingredients:

1/2 cup gluten-free oats (I used gf rolled oats)

1/2 cup plant milk

1 tsp baking powder

1 tsp apple cider vinegar

1 tsp vanilla

2 tbsp maple syrup

1 tbsp dark cocoa powder

1 tbsp almond butter

Pinch of sea salt

Mix-ins and toppings:

Raspberries

Dark chocolate chips

Top with almond milk if you want:)

Directions:

1. Preheat oven to 350° Fahrenheit.

2. Blend all ingredients in a blender or food processor excluding toppings and mix-ins. The batter should be smooth.

3. Pour batter into an oven safe bowl and fold in your mix ins (optional). Then sprinkle on your toppings.

4. Bake for about 30-40 min (bake times will vary based on your oven) or until toothpick comes out clean. Pour on some almond milk if you want and enjoy!!
